What are some sugar substitues I can use?

I know there are a lot of natural sweeteners out there that don't use nasty chemicals (like Splenda does, for instance). What are they?

This is really a growing market right now, so there are quite a few alternative sweeteners available. I would suggest trying Agave nectar, which comes from the agave cactus plant, and tastes a bit like honey, but has a far lower glycemic index. Stevia is also fabulous, and actually causes your sugar cravings to lessen when you use it as a sweetener in tea, or other beverages.
